Moshio is one of Japan's oldest forms of salt, made by steeping seaweed in seawater and cooking it down — a process that long predates modern salt production. Hakata Enbyo's Saredoshio Moshio is made using the ryuukashiki shijouka heiyo enten method, a traditional tidal saltfield technique that uses the heat of the sun and natural sea breezes to concentrate seawater from the Seto Inland Sea.
