Ma-kombu from the Shiroguchihamasan coast of southern Hokkaido's Donan region is considered one of Japan's finest kelp varieties — prized for producing a particularly clean, mellow and refined dashi with none of the sharpness or heaviness that lesser-grade kelp can carry. Yamaki's Donan Kombu Dashi uses 100% Shiroguchihamasan ma-kombu powder alongside kelp extract to deliver that characteristic gentle sweetness and smooth umami in a convenient granulated format. Unlike the bonito or ago dashi in the same range, this is entirely plant-based — making it a practical and flavourful option for vegetarians and vegans cooking Japanese food at home. It works particularly well in clear soups, tofu dishes, simmered vegetables and as a base for shojin ryori-style Japanese cooking, and dissolves quickly in both hot and cold water.
