Built on a gently simmered vegetable stock, the soup layers snow pear for its cool, delicate sweetness, polygonatum odoratum (yu zhu) for its moistening depth, glehnia root, Chinese yam, euryale ferox and candied jujube. The result is a beautifully clear, subtly floral broth with a clean, lingering sweetness — a time-honoured Cantonese recipe traditionally prepared to support the lungs and soothe dryness.
