XO sauce originated in Hong Kong in the 1980s as a prestige condiment built from dried seafood — principally dried scallops and dried shrimp — braised in oil with chilli, garlic, and shallot. Youki's version uses an XO base made in Taiwan, enhanced with scallop powder, dried scallop extract, dried shrimp, and a touch of brandy for complexity. The result is a deeply savoury, slightly spicy condiment with a concentrated umami character. A small spoonful stirred through fried rice, stir-fries, or noodles transforms a dish, and it works equally well as a dipping sauce alongside dim sum. No artificial seasonings or preservatives added.
