Ago dashi — made from flying fish — is a regional specialty of Nagasaki and the western coast of Kyushu, where the ingredient has been used for centuries and is considered by many to produce the most refined and elegant of Japan's dashi varieties. Yamaki's Nagasaki Yaki Ago Dashi uses flying fish that have been carefully charcoal-grilled before drying — a traditional processing method that gives the resulting dashi a noticeably cleaner, more delicate flavour than standard niboshi, with a gentle sweetness and an aromatic depth that comes from the grilling itself. The granulated format dissolves quickly and easily, and one gram seasons approximately one cup of miso soup. Free from all 28 Japanese designated allergens. A particularly good choice for those who find bonito dashi too assertive, or for anyone wanting to explore the quieter, more nuanced side of Japanese dashi culture.
