This dish uses skin-on pork belly, slowly braised with fermented preserved mustard greens (Mui Choi), allowing the pork to fully absorb the aroma and sweet-salty flavour of the vegetables. Mui Choi is a traditional Cantonese method of preserving vegetables in winter: the greens are sun-dried and salted to ferment, which allows long-term storage and develops a distinctive fragrance. Combining this preserved vegetable with pork belly not only enhances the flavour but also makes this dish a popular choice for both everyday meals and festive banquets.
